Ingredients
For Pastry
- 2½ cups all-purpose flour
- 4 tbsp sugar
- ½ tsp salt
- 1 cup (2 sticks) cold unsalted butter, cut into pieces
- ½ cup sour cream
- ½ cup ice water
For Filling
- 2 large leeks, cleaned and sliced thin
- 1 tbsp olive oil
- salt and pepper to taste
- 4 oz (about 1 cup) goat cheese, crumbled
- 1 lb fresh figs, sliced
- 1 tbsp fresh thyme, chopped
- 2 tbsp honey, for drizzle
- 1 beaten egg for egg wash
